World Cup Weekend

Hello Again to Summer Lodge Devon B&B and Breakfast Club

Sunshine is forecast all weekend and just in case you didn’t already know Its Father’s Day this Sunday! And to make it even more exciting for the man in every woman’s life it is also the first weekend England play in the World Cup – England v Italy 11pm Saturday night carrying through to June 15th – Father’s Day.
Not being totally crazy about football myself, I do have a number of men in my life, husband, brothers, Uncle and brother- in- law – Sadly Dad passed away over a 20 years ago now, I think of him most days and always on Father’s Day. My Father loved football I think as much as he enjoyed cooking and eating good food – in fact most men I know love food and football, not quite sure in which order! So the Summer Lodge Breakfast Club Special this weekend is being prepared with men and Dad’s in mind.

Here’s to a great weekend of sport, sunshine and a very special Sunday for Fathers everywhere.

Baked Beans on stove 3Beans in Tomato Sauce
Here’s what you need

1 tablespoon of Olive Oil
One white onion finely chopped
2 tablespoons of chopped basil
1 tablespoon of Balsamic Vinegar
Two cloves of garlic finely chopped
Two 8oz tins of chopped tomatoes
1 tablespoon of tomato puree
1 teaspoon of brown sugar (optional)
Two 8oz tins of cannelloni beans in water

This is what you do
Place the oil in a saucepan and add the finely chopped onions, fresh basil and garlic – cook until soft.
Add the Balsamic Vinegar and cook again for 2-3 minutes
Add salt and pepper
Add to this mixture two tins of chopped tomatoes and tomato puree and stir well. Bring to the boil and reduce the heat to a gentle simmer and cook this mixture for 30 minutes. Add sugar at this point and stir.
Add two tins of cannelloni beans and cook for a further hour until the mixture has reduced.
Serve hot with the Breakfast tart of leave to cool and store in the fridge until required.

Small individual flan tins x 4 (4inch flan tins)
Preheat oven to 200 c
8ozs short crust pastry – ready made short crust is great for this recipe.
4 slices of ham
4 fresh tomatoes
2 teaspoons of fresh rosemary finely chopped
4 eggs
4 tablespoons of double cream
4 tablespoons of grated parmesan cheese
Salt and pepper

This is what you do

Roll out the pastry as thin as you possibly can and line each individual tin with the pastry.
Line each tin with grease proof paper and baking beans or rice.
Bake blind for approx. 10 minutes. After 10mins remove greaseproof paper etc. and cook for a further 2-3 minutes to seal the bottom of the pastry.
Place a slice of ham in each tin – you may need to trim the ham to fit the each tin.
Add some tomato in each tin and sprinkle a little Rosemary
Break an egg into each tin (without breaking the yolk), add a tablespoon of cream and a tablespoon of grated cheese to each tin and place in the oven until golden brown and the egg is cooked – leave to cool a little before removing from the tins.
