Something for the Weekend … Remember this?

Hello again – It has been the most beautiful day today, compared to Wednesday, it is truly amazing. Waking at the crack of dawn, Wednesday presented itself with rain, rain and more rain – my trip to Manchester being made a tad difficult with road spray and at times extremely heavy traffic.

It was while waiting patiently in yet another M6 queue I began to wonder what on earth I would prepare for supper being as I had nothing in the fridge. I know this thought crosses the minds of most women at least once a week, if not once a day! So my thoughts were to find a much forgotten childhood dish that would bring a smile to many faces including my own.

 

So my challenge this week and to alleviate the boredom on my drive home was to go through the memory bank of  favorite food my Mum (affectionately known as Big G) used to produce at the drop of a hat…..and I came up with this …..Gypsy Toast served with Crispy Bacon and Honey – what a treat – it’s like Crunchy Nuts at midnight – all the ingredients in the cupboard and fridge and yes we did have this for supper! And yes this is now on the breakfast menu for Summer Lodge Devon

 

 

 

Gypsy toast with Baconwith effectsHere you go this is what you need and Ready in 10 minutes!

8 slices of bread
Four fresh eggs
Four tablespoons of cream (optional)
Four slices of smoked bacon
½ teaspoon of cinnamon
1 tablespoon of sugar
2ozs butter
A dash of olive oil
Runny Honey for serving.

 

This is what you do

Beat together the eggs, sugar, cream and cinnamon in a shallow dish.
Coat each side of each slice of bread in the egg mixture
Melt the butter and Olive Oil in a large frying pan.
Fry each slice of break on both sides until golden brown thereby creating your Gypsy Toast – put to one side and keep warm in the oven
Grill the smoked bacon until crispy and brown.
Place the bacon on top of the Gypsy Toast and serve on warm plates with a drizzle of honey –
Enjoy!
