A Recipe for the Long Weekend ahead

Peter and AdrienneIt’s been a fun week which included a business trip to London for the Café Culture show.  A combined outing for Easy Apps Business South West and Summer Lodge Devon BB & Breakfast Club. This trip united the joys and wonders of food with the amazing and evolving world of smart phone technology and I loved it! The icing on the cake being … I had dinner with Devonshire born Peter Sidwell, TV chef and judge on ITV’s Britain’s Best Bakery together with the founder and creator of  The Easy Apps Business, Robert Steadman. The reason why –  Easy Apps has created, developed and published the celebrity Chef’s Smart Phone App – Simply Good, available on Android and Apple. It’s free to download and is definitely worth a few minutes of your time – the Raspberry muffins are awesome – they are as easy to put together as they are to eat and I’m seriously considering putting these gastronomical delights on the Summer Lodge Breakfast Club menu.

I promised last week to post one of our recipes from the Summer Lodge Breakfast Club menu. A delicious breakfast for those of you who are looking forward to spending the Bank Holiday weekend at home.

The Summer Lodge Breakfast Club Bake is Chef’s choice for this weekend. Easy to put together using simple everyday ingredients. Prepare the night before or on the day,  this dish unites the flavours and tastes of early summer with the comfort and satisfaction of a jolly good breakfast – A great beginning to the long weekend. Enjoy.

Summer Lodge Breakfast Club Bake
Serves 8 people.
SLBC BakeBefore you begin you will need:
One 3.75 litre oven proof dish or similar
Cling film if preparing the night before

10 Bagels plain or with seeds     275gms of cherry tomatoes

(Ordinary bread may be used as an alternative to bagels)

225gm soft cream cheese           One small red onion chopped

550ml of fresh milk                       Dash of cream (optional)

8 large eggs

What you need to do:
Grease your oven proof dish with a little butter.
Split the bagels in half and spread both cut sides of the bagels with cream cheese then cut the cheesy bagels into 2cm cubes.
Arrange approximately one third of the cut bagels in the bottom of your dish – add to this a layer of tomatoes and chopped onion. Repeat these layers until all the ingredients have been used. If you have any cheese left over dot over the top layer of the mixture.

Whisk together the eggs, milk, cream and salt and pepper and pour over the bagel and vegetables – cover with cling film and refrigerate overnight.
Preheat the oven to 180 C/Gas mark 4 and bake uncovered for 1 to 1 ½ hours. When cooked the bake will be golden brown slightly raised and firm to the touch.
Leave to rest for 10 minutes before serving.
Serve on a warm plate with thick cut crispy smoked bacon or home cured ham and tomato sauce.
